Crash Hot Potatoes

Ladies, I am curious about something.  What types of meals do y'all cook?  Do y'all make the 50's standard meal and by that I mean a meat, two veggies and a starch or bread?  or do you make casseroles or maybe a pasta dish that has veggies in it?  We eat a lot of pasta and casseroles, but when I do make a meat with sides, this is one of my go to recipes.  It's a PW recipe and it's WONDERFUL! 


Crash Hot Potatoes



Ingredients


■12 whole New Potatoes (or Other Small Round Potatoes)

■3 Tablespoons Olive Oil

■Kosher Salt To Taste

■Black Pepper To Taste

■Rosemary (or Other Herbs Of Choice) To Taste

Preparation Instructions

Bring a pot of salted water to a boil. Add in as many potatoes as you wish to make and cook them until they are fork-tender.

On a sheet pan, generously drizzle olive oil. Place tender potatoes on the cookie sheet leaving plenty of room between each potato.

With a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with more olive oil.  (I don't have a potato masher so I used a fork)

So, if you look on PW's picture of this recipe, each individual potatoes is mashed and it's MUCH prettier.  I was in a hurry so I cut my tators up smaller and kind of mashed them all together.  It looks a little like something they would serve in Oliver Twist - "Please sir, I want some more" but the taste is pretty much the same. 
Sprinkle potatoes with kosher salt, fresh ground black pepper and fresh chopped rosemary (or chives or thyme or whatever herb you have available.)  Just for the record, I totally used dried rosemary in the jar.  I rarely get fresh rosemary at the store because it is EXPENSIVE and y'all know I kill plants so it's not like I could grow my own. 

Bake in a 450 degree oven for 20-25 minutes until golden brown.


YUM!  Look how brown and crispy.  MMMM!


Served with grilled pork tenderloin and grilled squash.  MMMM!

  1. I make a lot of casseroles and pasta dishes...just seems easier to me for some reason. One thing we do eat fairly regularly are Salmon Patties...ever heard of them? I think I might share the very simple recipe on my blog soon. Those taters look so TASTY!

  3. Yum!! We make a similar potato dish I always serve it with Chicken that has been marinated in lots of herbs too!! Delish
    We eat a lot of mexican( tacos, taco salads,enchiladas)etc

  4. I LOVE the PW recipes but sometimes they're so big I cut them in half. I also cook a lot of recipes out of Cooking Light magazine (to balance out the Pioneer Woman) and some of my fav recipes...believe it or not... have come out of Men's Health!

  6. Well, I love a gooey mushed up casserole, but because I have two finicky kids around here (one that I raised and one that I married...) we tend to eat a lot of meals exactly like the one you pictured with a grilled meat and often vegetable and a couple of sides or a side and a salad.

    Those look great. It took me a minute to figure out PW (Yeah, I know, I'm slow).

    I think it looks terrific.

    btw, bird nest (www.geocities.jp/hongkong_bird_nest/index_e.htm) is made up of about 58% soluable proteins...the highest amoung all food and even synetic protein powders

    it greatly increase tissue regeneration

  11. This is a side that we would definitely like.

    I pretty much have to make our dinners for the week on Sunday. After I work all day and then either run, go to tennis, or the gym, it's late when I get home and if I cooked, we wouldn't eat until 8 pm or later. I will sometimes whip up a pasta dish in the evening, but it has to be something that I can have ready in 30 min. I like having a casserole made that we can microwave and eat. In the summer when I'm home, I do cook nicer meals.
